Alvarez Organic Farms

Alvarez Organic Farms founder Hilario Alvarez moved from Mexico to the US after selling all his land and cows back home and came here with nothing but his passion for the soil. Through hard work and dedication to his craft he was eventually able to purchase a 30 acre plot of land where his family settled. Over the years Alvarez Organic Farms has become one of the largest organic producers in Washington state. Marshmallow Lab discovered Alvarez while being a vendor at the Proctor Farmers Market and our relationship with this great farm as only grown from there.

Marshmallow Lab utilizes their Floral Gem chilies in an amazing spicy marshmallow that can be enjoyed in many ways. While we enjoy dropping them into a hot cup of cocoa or coffee; they are also incredible on a ‘Smore using dark chocolate. The combination of the sweet/heat from the chili pairs perfectly with the dark chocolate.

We are thrilled to have such an amazing farm so close to home that holds family in such a high regard, just as we do here at Marshmallow Lab. Alvarez Organic Farms can be found at many farmers markets and restaurants throughout Washington state.
